Description
This is a cheese usually sold in a circular shape on the top and bottom, with convex sides; semi-hard in texture that can be easily sliced, weighing between 2.5 and 30 kg.
However, it can also be found in a rectangular block, wider but lighter, weighing between 2.5 and 5 kg.
Whether it has a hard crust with a thin layer of vegetable oil or no crust at all, its color tends to be yellowish or slightly straw-colored depending on its maturation stage.
The flavor is moderately sweet. It has a creamy appearance that hardens with age; and according to its consumers, the older it is, the better.
