Ingredients

2 kilograms of Chard

Oil

3 Chopped garlic cloves

1 Chopped onion

100 grams of Smoked bacon

4 tablespoons of Flour

½ liter of Milk

4 Eggs

75 grams of Rendered fat / Lard

4 tablespoons of Grated cheese

Preparation

Step 1 : First, cook the chard in salted water, drain, and chop.

Step 2 : Then, sauté the garlic and onion in hot oil, add the bacon cut into strips, and cook until transparent.

Step 3 : Next, add the chard and sauté for a few minutes, seasoning with salt, pepper, and nutmeg.

Step 4 : Remove the mixture from the heat and gradually dissolve the flour with cold milk.

Step 5 : Then, lightly beat the eggs, mix with the milk, and add 2 tablespoons of grated cheese to form a paste.

Step 6 : Season this mixture and combine it with the vegetables.

Step 7 : Pour the preparation into a well-greased baking dish.

Step 8 : Drizzle with melted fat, sprinkle with the remaining cheese, and bake in a hot oven until it has the consistency of an omelet.
