Chicken Doraditos
Ingredients
1 Large chicken fillet
12 Puff pastry sheets for empanadas
2 tablespoons of Oil
Chopped parsley
2 Green onions
½ Creole onion
½ Chicken-flavored broth cube
1⁄4 cup of Hot water
1 Beaten egg
Preparation
Step 1 : The Creole onion is chopped into brunoise and the green onions into chiffonade.
Step 2 : They are sautéed in oil and seasoned with parsley.
Step 3 : Then, the chicken is cut into cubes and browned together with the onions.
Step 4 : Add the chicken broth cube and hot water, letting it reduce.
Step 5 : Once the chicken is cooked, process it in a food processor along with the other green onion until obtaining a uniform filling.
Step 6 : If desired, you can add cream cheese or heavy cream for a creamier consistency.
Step 7 : Let the filling rest.
Step 8 : Spread the cold filling on the empanada sheet and roll it up like a cannoli.
Step 9 : Grease a baking sheet and place the doraditos with the seam side down to prevent them from opening during baking.
Step 10 : Before baking, brush with egg and brush again halfway through cooking.
