Ingredients

800 grams of Hake fillet (4 fillets without bones)

2 Eggs

2 Garlic cloves

50 grams of Chopped onion (1/2 small)

300 grams of Flour 0000 (3 cups)

350 grams of Canned cherry tomatoes (1 can)

Oil as needed

½ cup of White wine

Breadcrumbs as needed

2 cups of Vegetable broth

1 Bay leaf

Salt, pepper, and fresh basil

Preparation

Step 1 : The hake, cut into pieces, is processed together with the eggs in a food processor.

Step 2 : Then, the mixture is transferred to a bowl, seasoned, and the chopped garlic and previously sautéed onion are added.

Step 3 : All is mixed and the flour is incorporated until a dough forms.

Step 4 : Using this dough, form the meatballs, coat them with breadcrumbs, and fry in plenty of oil until golden.

Step 5 : Keep warm.

Step 6 : In a separate skillet, sauté the garlic in a tablespoon of oil, add the white wine and let the alcohol evaporate.

Step 7 : Next, add the processed tomato, bay leaf, basil leaves, and vegetable broth.

Step 8 : Cook this sauce for 10 minutes over very low heat.

Step 9 : To serve, carefully place the meatballs over the tomato sauce.
