Ingredients

1 kilogram of Llama loin

3 grams of Pepper

20 milliliters of Olive oil

400 grams of Peruvian tomato

1 Locoto

50 milliliters of Corn oil

70 grams of Red morrón

100 grams of Zapatill

200 grams of Zucchini

100 grams of Carrot

200 milliliters of White wine

5 grams of Vegetable broth

50 milliliters of Olive oil

50 grams of Onion

200 grams of Cream

200 grams of Grated cheese

50 grams of Butter

1 pinch of Salt

Preparation

Step 1 : In a skillet, add oil and heat until hot, then sear the loin on both sides, seasoning with salt and pepper to taste.

Step 2 : Next, place it in the oven at 180°C for 30 minutes.

Step 3 : All ingredients are ground in a mortar or grated using a hand grater for the tomato and locoto.

Step 4 : Then, mix the ingredients together with salt and finely chopped herbs.

Step 5 : Wash the quinoa until the water runs clear, then place it in a pot with boiling water or broth.

Step 6 : Cook until the grains are tender, about 12 minutes in boiling water.

Step 7 : Drain and let cool.

Step 8 : In a large skillet with oil, add chopped onion, garlic, morrón, carrot, zucchini, and squash in small cubes.

Step 9 : Add wine and let it evaporate for a few minutes.

Step 10 : Then, incorporate the cream and quinoa, stirring continuously to prevent sticking.

Step 11 : Finally, add the cheese and butter.
