Roast Beef with Potatoes
Ingredients
1 kilogram of Roast beef
3 Large potatoes
2 Onions, sliced into thick rings
½ Red pepper, cut into strips
½ Green pepper, cut into strips
Oregano
Ground chili and salt
Oil
Preparation
Step 1 : To prepare this dish, start by cutting the roast beef in half and removing the fat from the edges.
Step 2 : Then, season the meat with coarse salt on both sides and place it, skin side down, on a baking sheet.
Step 3 : Arrange the potatoes, previously salted, on the sides of the meat.
Step 4 : Next, place the onion rings and the chopped peppers on top of the meat.
Step 5 : Sprinkle with oregano and ground chili to taste, and drizzle all the ingredients with oil.
Step 6 : Bake in a preheated oven at 220°C for about an hour and a half.
Step 7 : To check if it’s done, pierce the meat and ensure the juices run clear, and confirm that the potatoes are golden and cooked.
Step 8 : Once cooked, turn off the oven and let it rest for a few minutes to let the juices settle.
