Ingredients

Supreme Maryland with French Fries

4 Chicken supremes

3 Yellow corn cobs

1 kilogram of Potatoes

4 Plantains

1 Onion

1 can of Bell peppers

25 grams of Lard

1 cup of Flour

1 ½ cup of Breadcrumbs

1 cup of Oil

9 Eggs

½ cup of Milk

½ cup of Vegetable broth

50 centiliters of Cream

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Using a knife, cut the supremes in half without separating the parts and cover them with plastic wrap; then, with a meat mallet, pound the supremes to even out their thickness.

Step 2 : Beat the eggs in a bowl and season with salt and pepper as desired.

Step 3 : Coat the supremes with flour, then dip in the beaten eggs, and finally, coat with breadcrumbs.

Step 4 : Fry the supremes in plenty of hot oil until golden, then drain on absorbent paper.

Step 5 : For the béchamel sauce, heat the milk and broth in a saucepan until boiling; in another, melt the lard with the flour and cook for 3 minutes, stirring constantly. Then, add the hot milk while stirring and cook until thickened.

Step 6 : Prepare the corn cream by sautéing the chopped onion in lard, then add the corn, corn puree, béchamel, and cream. Cook for 3 minutes, season with salt and pepper, and set aside.

Step 7 : Cut the potatoes into thin sticks, rinse, and dry them; fry in hot oil until crispy, then drain and season with salt and pepper.

Step 8 : Peel the bananas, dip them in beaten eggs and breadcrumbs, fry in hot oil, and drain on paper. Also, fry the eggs in a skillet with little oil until the whites are cooked and the yolk remains runny.

Step 9 : To assemble the plate, place the supremes on each plate, add a piece of bell pepper and a fried egg on top, surround with the fries and fried bananas, and serve with the corn sauce in a small pot.
